Modern Scandinavian Baking
Food has an incredible way to connect us to others, a means by which we show love. I’ve written for years here on Outside Oslo, about my grandmothers, those wonderful women who shared their hearts through the traditional Norwegian feasts and countless buttery cookies they made throughout the years. Their lives have inspired me as I’ve written about Scandinavian food for this past decade, and now it’s an honor to be putting a bit of that same heart in book form for you.
Modern Scandinavian Baking: A Cookbook of Sweet Treats and Savory Bakes is now available, as of April 14, 2020.
I’ve spent months officially creating this book, but really it contains the work of ten years of my heart.
I’ll let you hop online to read the publisher’s description, but this is what I want to say about it: The 60+ recipes reflect the essence of Scandinavian baking–all the love, hospitality, and warmth that I so associate with my heritage. You’ll find dozens of traditional Norwegian, Swedish, and Danish cakes, cookies, pastries, and breads, along with some playful interpretations of classics. I’ve also included some beloved heirloom recipes from my own Norwegian family.
Hospitality is very important to me, and it’s my hope that this book will help you to share that beautiful Scandinavian-style warmth with those you love, whether it’s as simple as having a neighbor over for tea and cookies or celebrating a special event with a multilayered cake rich with pastry cream, berries, and marzipan.

If you’re anything like me, you’ve let some healthy nutrition and lifestyle decisions slip during this pandemic. (Hello, I’m the author of a Scandinavian BAKING book!!). I suspect you’re also eager to prioritize healthy habits again. I have good news for you:
I created this book with hopes that it will inspire many of you that prioritizing a healthy lifestyle can be totally delicious and satisfying.
While the cookbook is outside of my niche as a Scandinavian food writer, it very much reflects the way I like to eat about 80 percent of the time–the way my body feels its best. And of course there’s plenty of Scandinavian influence in the book, with recipes like Scandi Fish Cakes with Remoulade, a White Wine-Poached Cod with Creamy Dill Sauce, and more.
